SWEET POTATO CAESAR SALAD [VEGAN]

INGREDIENTS

FOR THE SALAD:

  • 1 batch roasted garlic Parmesan dressing
  • Lettuce (romaine, arugula)
  • 1/4 cup capers
  • 2 medium sweet potatoes
  • 1 tablespoon olive or canola oil
  • 2 cloves garlic
  • Salt and pepper to taste

FOR THE PARMESAN BREADCRUMBS:

  • Your favorite bread, cut into cubes (gluten-free, if needed)
  • A splash olive or canola oil
  • 2 tablespoons vegan Parmesan, plus more for serving
  • 3 garlic cloves
  • Salt and pepper, to taste

FOR THE DRESSING:

  • 1/2 cup and 3/4 cup cashews, divided
  • 2 tablespoons nutritional yeast
  • A pinch of salt (optional)
  • Salt and pepper, to taste
  • 1/4 cup apple cider vinegar
  • 10 garlic cloves, peeled
  • 1 1/4 cups almond milk

PREPARATION

  1. Prepare the sweet potatoes. Cut them into slices and/or cubes, season with salt and pepper, garlic mix and oil. Put them on a baking sheet and bake for around 20 minutes at 400°F. While the potatoes are baking, prepare the roasted garlic Parmesan dressing by combining all ingredients until smooth.
  2. Assemble the salad. Simply put the lettuce and capers together into a big bowl or directly on your plate. Add the roasted sweet potatoes and garnish with dressing.
  3. To make the bread crumbs, just whip up all the ingredients and bake for around 15 minutes at 390°F on a baking sheet.

CHILI LIME BAKED SWEET POTATO WEDGES [VEGAN]

INGREDIENTS

FOR THE FRIES:

  • 2 large sweet potatoes, sliced into wedges

FOR THE SPICE MIXTURE:

  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

FOR THE DIPPING SAUCE:

  • 1 ripe avocado
  • Juice from 1 small lime
  • 1/2 teaspoon chili powder
  • Extra lime wedges, for squeezing

PREPARATION

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper or tin foil shiny side down.
  2. Slice the sweet potatoes into wedges.
  3. Mix the spice mixture in a small bowl.
  4. Place the wedges on the baking sheet and sprinkle the spice mixture over them, use your hands to gently toss the wedges around until they are coated in the spice mixture on both sides.
  5. Place with the skin side touching the baking sheet and place them in the oven for 45 minutes.
  6. About 5 minutes before they are done baking prepare the dip. If the avocado is ripe enough you should be able to just add the avocado, lime juice and chili powder to a small bowl and use a fork to mash it together, if you want it a more creamy texture, then add the avocado, lime juice, and chili powder to a mini food processor and blend until creamy and smooth.
  7. Remove the wedges from the oven, let them cool, and serve.
