Recipe of the Week: Baked Smoky Bacon & Bordeaux Smoked Salmon including Smoked Salmon Scramble, ‘Salmon’ Salad Sandwich, Smoked Carrot ‘Salmon’ Sandwiches

BAKED SMOKY CARROT BACON [VEGAN, GLUTEN-FREE]

INGREDIENTS

  • 3 large carrots
  • 2 tablespoons rapeseed oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt

PREPARATION

  1. Rinse carrot (no need to peel) and slice, lengthwise, using a mandoline. Lay the carrot strips on a baking sheet lined with parchment paper. Preheat oven to 320°F.
  2. Stir together remaining ingredients in a small bowl and then brush carrot strips on both sides.
  3. Place in the oven for 15 minutes, or when the carrot strips are wavy.

It’s rich in iodine, amino acids and proteins, and iodine. It takes 15 days to produce a batch of it and only 3 hours to create the tasty product!
