Kohlrabi Carpaccio, Cherry Soda & Disneyland Launches New Menu w/ Chipotle Cauliflower Buffalo Bites, Tofu Vegetable Kebabs with Peanut Sauce, Recipe of the Week!

Ingredients


For the salad

  • 1 kohlrabi
  • 1 small green apple
  • 1 small red apple

For the dressing

  • 1 tablespoon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon maple syrup

For the topping

  • toasted sesame seeds
  • olive oil to drizzle
  • salt & pepper
  • coriander/dill/edible flowers

Preparation

  1. Peel and then thinly slice the kohlrabi and apples on a mandolin and spread out on a serving plate. Drizzle the dressing over the salad and a good quality olive oil.
  2. Meanwhile, roast sesame seeds until golden (2-4 minutes). Add toppings (coriander, edible flowers, roasted seeds) and season with salt and pepper.
  3. Serve fresh.

Ingredients


For the Cherry Syrup:

  • 1 1/2 cups fresh pitted sweet cherries
  • 1 1/2 cups water
  • 1/2 teaspoon pure stevia powder

For the Cherry Soda:

  • 3 cups club soda
  • 1 cup Cherry Syrup

Preparation

  1. First, make the Cherry Syrup. Heat the cherries and water in a small saucepan over medium heat to a simmer. Allow to simmer 10 minutes.
  2. While the cherries and water are simmering, mash the cherries to release more flavor.
  3. Remove from heat and strain the cherries through a fine-mesh sieve. Use the back of a wooden spoon to remove as much liquid from the cherries as possible.
  4. Stir in stevia. Cherry Syrup may be stored in an airtight container in the refrigerator up to 1 week.
  5. For each serving of Cherry Soda: pour 3/4 cup club soda into a glass.
  6. Top with 1/4 cup Cherry Syrup and stir to combine.
