Recipe(s) of the week: Strawberry Shortcake Overnight Oats & Lemon Jasmine Tea Smoothies

These strawberry shortcake overnight oats will remind you of the beloved dessert but they’re so healthy you can eat them for breakfast every day.

Who doesn’t love dessert for breakfast? But starting the day with a white-sugar-packed caloric bomb is not exactly the best idea in the world. If you’ve ever tried this, you surely remember the sugar high and the following crash along with uncontrollable cravings.

Thank goodness you can have your (short)cake and eat it too! With these decadent strawberry shortcake overnight oats, you’ll feel like you’re indulging but you’ll be nourishing your body at the same time. There’s no sugar, butter, oil, dairy or refined grains in this spring breakfast, just healthy ingredients bursting with vitamins and minerals.

Strawberry Shortcake Overnight Oats
Because I swapped some of the milk for yogurt, these overnight oats get super thick and creamy which makes them even more satisfying than your usual bowl of oatmeal. To make them even richer and more dessert like, I mixed in a tablespoon of cashew butter. You can use a different nut or seed butter if you like, I bet coconut butter would be heavenly here.

The extra vanilla and a generous dose of fresh strawberries just top things off and what you end up with is like strawberry shortcake batter with strawberries mixed in :) Now that right here is the perfect start of the day if you ask me.

Here’s the recipe. You can adjust the ingredients to make these oats completely gluten-free, nut-free, soy-free, or sugar-free.

These strawberry shortcake overnight oats will remind you of the beloved dessert but they're so healthy you can eat them for breakfast every day.

INGREDIENTS
  • ⅓ cup (30 g) oats (use gluten-free if you prefer)
  • ⅓ cup (80 g) unsweetened soy yogurt (or another yogurt of choice)
  • ⅓ cup (80 ml) almond milk (or other milk of choice)
  • 1 tablespoon (15 g) cashew butter (or other nut or seed butter, coconut would be amazing here)
  • 2 tablespoons granulated sweetener (I used erythritol), or more to taste
  • ¼ teaspoon pure vanilla extract (I used my homemade one)
  • 4-5 strawberries, sliced or roughly chopped
INSTRUCTIONS
  1. Put all ingredients except strawberries in a medium bowl and mix until combined.
  2. Gently mix in the strawberries.
  3. Let sit in the fridge overnight to allow the oats to soak up all the liquid and thicken the overnight oats.
  4. Enjoy the following morning.

INGREDIENTS

  • 1 cup double brewed jasmine tea, chilled (I used Pique Tea Crystals)
  • 1/2 frozen banana
  • handful of fresh spinach
  • 3/4 cup coconut milk
  • 2 tsp raw honey
  • 2 tsp chia seeds
  • Juice from 1 lemon

DIRECTIONS

  1. Double brew 1 cup of tea and store in the fridge for 20 mins or so, just until it's cooled.
  2. Add all other ingredients to a high speed blender and lastly add in the brewed tea.
  3. Blend on high until smooth and serve right away!
