Maple Pecan Latte

Sweet Potato Waffles [Dairy Free & Vegan]

6 waffles

Ingredients

  • 2 medium sweet potatoes (weighing ~ 3/4 pound)
  • 2 tablespoons almond milk (or other dairy free milk)
  • 1 1/2 cups chickpea flour (or normal flour)
  • 1 tablespoon Mixed herbs
  • 1 tablespoon Garlic powder
  • 1 teaspoon Onion powder
  • Black pepper to taste

Preparation

  1. Peel the potatoes and cut into small cubes and boil for ~20 minutes until soft
  2. Transfer the potatoes to a mixing bowl and mash, then add the plant-based milk and mix (herbs and salt/pepper can also be added at this point)
  3. Bit by bit add the flour and make sure you mix it thoroughly
  4. Pre-heat your waffle iron and spray with a non-stick spray (this recipe used coconut spray)
  5. Add the mixture to your iron until golden, should take about 2-3 minutes (but will vary)
  6. Enjoy!

Maple Pecan Latte [Dairy Free & Vegan]

Ingredients

  • 1/3 cup pecans, soaked in water
  • 1 cup water
  • Pinch of sea salt
  • 2 teaspoons maple syrup
  • 1 double shot (2 ounces) espresso or freshly brewed coffee

Toppings

  • 1/2 teaspoon maple syrup (optional)
  • 1/8 teaspoon vanilla extract (optional)
  • 1/2 pecan, very finely chopped

Preparation

  1. Blend the soaked pecans, the water, and the salt in a blender until smooth.
  2. Filter the pecan milk into a small pot through a nut milk bag and stir in the maple syrup.
  3. Heat the maple pecan milk until very hot but not boiling. Use a milk frother to make it foamy.
  4. Pour the espresso into a cup and add the maple pecan milk. Top with the foam.
  5. For the toppings, mix the maple syrup with the vanilla extract, if using, and drizzle on top, then add the chopped pecan.

Notes

You can turn this recipe into an iced drink by not heating the milk, and adding a cup of ice cubes to your jar, cup, mug, or glass.
