CHRISTMAS WALNUT BREAKFAST SAUSAGE

  • 1 teaspoon ground flax or milled chia mixed with 1 tablespoon water, let sit for 5 minutes
  • 1 cup walnuts
  • 1/4 cup rolled oats (gluten-free)
  • 2 teaspoon olive oil (plus 1 teaspoon additional for cooking)
  • 1 1/2 teaspoons maple syrup
  • 4 drops liquid smoke
  • 1/4 teaspoon salt (depending on how salty you like them)
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon red pepper flakes (depending on taste for heat!)
  • 1 tablespoon of grilled seasoning blend

FOR THE GRILLED SEASONING BLEND:

  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

PREPARATION

  1. Pulse all ingredients in blender until well combined. Spoon mixture, one tablespoon at a time onto a plate; press into a patty.
  2. Heat 1 teaspoon olive oil over medium to medium-high heat; add sausage patties, four at a time, cook 2 minutes, or until brown; turn and cook an additional 2 minutes, or until brown.

SIMPLE GINGERBREAD HOUSES

INGREDIENTS

FOR THE GINGERBREAD:

  • 1 cup and 2 tablespoons of gluten-free flour
  • 1/3 cup of coconut oil (melted)
  • 1 tablespoon of ground ginger
  • 4 tablespoons of blackstrap molasses

FOR THE ICING:

  • 3-ounces of chickpea brine
  • 1 teaspoon of vanilla extract
  • 3 cups of icing sugar

PREPARATION

  1. Pre-heat your oven to 350°F and line a baking tray with greaseproof paper.
  2. In a mixing bowl, combine the plain flour, coconut oil, ground ginger and molasses. Add more flour if too wet or coconut oil if too dry.
  3. Mix and bring together with your hands until a dough forms.
  4. Lay a sheet of baking paper on your work surface, place the dough on top then lay another piece of baking paper on top of the dough then roll out the dough using a rolling pin. It’s much easier and the dough doesn’t stick to the worktop or rolling pin.
  5. Using a gingerbread house template, lay them on top of the dough and cut around the shapes.

WINTER WONDERLAND GINGERBREAD CAKE

FOR THE GINGERBREAD COOKIE DOUGH:

  • 3 cups of all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 cup of vegan butter
  • 1/2 cup of packed light brown sugar
  • 2/3 cup of molasses
  • 1 tablespoon of ground flax seeds
  • 2 tablespoons of hot water
  • 1 teaspoon of vanilla extract

FOR THE GINGERBREAD CAKE:

  • 1 stick of vegan butter
  • 1 cup of light brown sugar
  • 1 tablespoon of ground flax seeds
  • 3 tablespoons of warm water
  • 1 cup hot water
  • 1 1/4 cup molasses
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 2 teaspoons ground ginger
  • 1/4 teaspoon ground cloves
  • 1 and 1/2 teaspoon ground cinnamon
  • 2 and 1/2 cups of all purpose flour
  • 2 tablespoons of natural unsweetened cocoa powder

FOR THE VEGAN CREAM CHEESE ICING:

PREPARATION

FOR THE GINGERBREAD COOKIE DOUGH:

  • Combine ground flax seed with hot water and whisk smooth.
  • Let stand for at least 5 minutes to thicken to a paste.
  • Sift the flour with the baking soda and all of the spices and the salt and pepper, set aside.
  • Cream the vegan butter with the brown sugar until light and fluffy about 4-5 minutes,
  • Add the molasses to the creamed butter mixture and mix well, scrape the sides of the bowl and then add the flax paste and vanilla extract.
  • Add the sifted flour mixture while blending on low speed, mix until it is all incorporated evenly.
  • Turn out the entire dough onto a large piece of plastic wrap.
  • Wrap the dough tightly and press into a disc.
  • Refrigerate for at least 3 hours, preferably overnight before rolling.
  • Once out of the fridge you must re-roll this dough.
  • Mash it all together and knead it back together, then RE-roll on a floured work surface until it is pliable.
  • Cut your shapes, and place on a parchment lined sheet pan.
  • Preheat the oven to 350° F, you will bake for approximately 12-18 minutes or until light golden brown.

FOR THE CAKE BATTER:

  • Combine ground flax seed with hot water and whisk smooth.
  • Let stand for at least 5 minutes to thicken to a paste.
  • In the meantime, cream the softened vegan butter with the light brown sugar on medium -high speed until very light and fluffy, about 3-5 minutes.
  • Scrape bowl periodically to ensure even mixing.
  • Sift together all the dry ingredients from the baking powder to the cocoa powder and reserve.
  • Add the molasses to the hot water and then add the baking soda to that. It will bubble up as the baking soda begins to activate. Stir to combine.
  • Add the flax paste to the creaming vegan butter and sugar mixture, and mix well.
  • Add 1/3 of the dry ingredients, blend well.
  • Then add 1/2 of the molasses/water mixture slowly while mixing on low speed.
  • Stop and scrape the bottom and sides of the bowl often.
  • Repeat the process with another ⅓ of the dry, the remaining liquids and then the last addition of dry ingredients.
  • Pour the batter into prepared pans and bake immediately in preheated 350° F oven approximately 25-30 minutes or when they are springy to the touch when you gently press the centers.
  • Cool the cake layers in the pan then turn out onto a cooling rack to cool the rest of the way while you prepare the cream cheese icing.

FOR THE CREAM CHEESE ICING:

  • Smooth cream cheese and butter with a paddle attachment.
  • Add sifted confectioners sugar, blend on low just to combine.
  • Add extract then add optional vegan buttercream icing.
  • Mix smooth.

SANTA SPONGE CAKES

INGREDIENTS

FOR THE DRY SPONGE:

  • 3/4 cup and 2 tablespoons plain flour
  • 2/5 cup and 2 teaspoons sweetener (avoid artificial)
  • 3/4 tablespoon baking powder
  • 3/4 tablespoon baking soda

FOR THE WET SPONGE:

  • 3/4 cup and 2 teaspoons non-dairy milk
  • 1 tablespoon orange extract (or whatever flavoring you like)
  • 2 1/2 tablespoons vegetable oil
  • 1 1/2 tablespoons apple cider vinegar

FOR DECORATION:

  • Red icing
  • White icing
  • Black icing
  • Pink icing (roll red and white together)

PREPARATION

  1. Pre-heat the oven to 340°F.
  2. Mix the dry ingredients together thoroughly in a bowl.
  3. Mix the wet ingredients in a separate bowl then add to the dry ingredients.
  4. Use a fork to whisk/mix the mixture together until all is combined and smooth.
  5. Pour the mixture into a greased baking tin and put in the oven for 14 minutes.
  6. Then (leave the oven on), take the mixture out and set aside to cool for about 15 minutes.
  7. When cooled, use your hands to crumble the cake up and then roll the sponge into 12 balls. The sponge should be a little oily still, which will help keep the balls together. If it’s not, add some melted coconut oil.
  8. Put the balls back in the oven for about 15 minutes until browned.
  9. Leave for a further 15 minutes in the refrigerator until cooled.
  10. You can then – if you like – start decorating them with icing.

Sticky Gingerbread Cake With Drizzle

STICKY GINGERBREAD CAKE WITH DRIZZLE

INGREDIENTS

TO MAKE THE CAKE:

  • 5-ounces plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 3 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon mixed spice
  • 1 teaspoon cinnamon
  • 1/4 cup almond milk
  • 1/2 cup sunflower oil
  • 2 rounded tablespoons molasses
  • 2 rounded tablespoons golden syrup
  • 2 tablespoons vanilla vegan yogurt

TO MAKE THE DRIZZLE:

  • 5 tablespoons icing sugar
  • Zest of 1 unwaxed orange
  • Juice of 1/2 unwaxed lemon

PREPARATION

  1. Pre-heat the oven to 355°F and baking dish with parchment paper.
  2. In a large bowl, mix together the flour, baking powder, ginger, nutmeg, mixed spices, and cinnamon.
  3. In a separate bowl, whisk together the almond milk, sunflower oil, molasses, golden syrup, and yogurt until combined and a deep, dark caramel has developed.
  4. Mix the wet mix into the flour mix and stir until just combined- don’t over mix as this will affect the texture of the cake. Pour into the dish and bake in the oven for 30 minutes until the top appears firm and shiny.
  5. When the cake has cooled completely, cut into 12 squares. Mix the icing sugar, orange zest and lemon juice in a bowl. Drizzle over the cakes using a spoon in an exaggerated zig-zag pattern and allow to set.

It’s All Natural, an Ohio grocery store specializing in plant-based, organic, and gluten-free products, is holding a vegan holiday luau this holiday season! Many different food items will be offered, like milkshakes from The Little Kitchen Food Truck, Hawaiian grilled pineapple tofu skewers from Ching Ter Maitreya Temple, and delicious cream filled doughnuts from Doughasis! The market will be 100 percent plant-based and full of local businesses and artisans who are committed to health and animals. 5. Vegan in Asbury Park, Asbury Park, NJ

This year, New Jersey VegFest is hosting a vegan pop-up market in Asbury Park. The event will consist of local vegan fare, and there will be vegan and cruelty-free vendors set up, too. The featured vendor will be New Jersey Farm Animal Save, which is a non-profit vegan outreach group committed to speaking up for animals. The event will be $5 at the door, or you can buy a season pass for $20 that will get you into all the vegan pop-ups for 2018!

6. Morristown Vegan Pop-Up Shop, Morristown, NJ

The Laundromat Bar in Morristown is holding a vegan pop-up this year that sounds amazing! Vegan food and drinks will be offered, and you must be at least 21 or older to attend. The event costs $5 at the door, or you can purchase a New Jersey vegan pop-up pass for $20 that will get you into any of the New Jersey vegan pop-ups in 2018.
This event is Sunday, February 25th, 2018. from 12:00 PM until 6:00 PM. It will be held at The Laundromat, 4 Dehart Street, Morristown, New Jersey, 07960.

7. Pop-Up Vegan Bakery, Manchester, CT

This holiday season 21 Oak is holding a bakery vegan pop-up. The event will have lots of sweets for sale for those craving sugar, and everything can be pre-ordered, otherwise it is first come, first served. Plant-based cupcakes, like chocolate with peppermint or mocha frosting and chocolate with coconut frosting, will be for sale for $3, or you can purchase a cake, some cookies, and more! 13. Happy Holiday’s Vegan Pop-Up, Dayton, OH

This Christmas Eve, Sprouting Dreams LLC, will be holding a holiday vegan food party! You will pick between three entrees (crispy seitan, lentil loaf, and roasted seitan), a variety of sides, desserts, and there will even be plant-based eggnog!
