7 ingredients, no dairy, no refined sugar, no gluten, no cholesterol, very little salt and nothing animal based! Plus they’re so quick & easy to make, you’ll be done before you can say “coconut oil”.

INGREDIENTS
  • ½ cup coconut oil
  • ½ cup cocoa powder
  • ¼ cup maple syrup or agave
  • ½ cup all natural peanut butter
  • ⅛ teaspoon salt
  • 1 very ripe banana
  • 2 teaspoons of my powdered sugar substitute (I used powdered erythritol)
  • ¼ teaspoon all-natural vanilla extract (I used my homemade one)
INSTRUCTIONS
  1. Melt the coconut oil in a microwave or on the stove top.
  2. Pour in the cocoa and maple syrup and whisk until smooth.
  3. Use a teaspoon or a brush to spread the chocolate evenly on the bottom and sides your silicone muffin mold or muffin cups. Regular muffin tin should work too, but you will have to dip the bottoms in hot water to get the cups out in the end.
  4. Chill in the fridge or freezer while you make the filling (leave the leftover chocolate mixture outside so that it doesn't harden).
  5. Combine the peanut butter, salt, banana, healthy powdered sugar and vanilla in a food processor and pulse until smooth.
  6. Take out the mold or cups from your fridge and fill with the peanut mixture.
  7. Pour over the leftover chocolate and spread carefully (if the chocolate is not runny enough, warm it up slightly).
  8. Chill or freeze until firm and enjoy!
