I hope you’ve been enjoying the summer heat and using it as a perfectly plausible excuse for working your way through this amazing healthy ice-cream recipe collection! It’s quite a handful :) But hey, there’s never enough healthy frozen treats. If you’re up for something a little less sophisticated though, these peanut butter bites are just the recipe for you. A simple snack you can just pop into your mouth and get back to whatever you were doing. And then come back for seconds like ten times. But maybe that’s just me.
They’re as simple as ever, super good for you, entirely plant-based and gluten-free AND they taste pretty much like chunky monkey ice cream! The time investment? 5 minutes tops on your part, leave the rest to your freezer.

Serves: 4
INGREDIENTS
- 2 medium bananas
- ½ cup (125g) plain soy yogurt (or yogurt of choice)
- 2 tablespoons PB2 (12g) (peanut butter should work too but you might want to use a blender to make sure it mixes evenly with the yogurt)
- ¼ teaspoon vanilla extract (I used my homemade one)
- 1 teaspoon erythritol (or sweetener of choice)
- optional: melted chocolate for drizzling
INSTRUCTIONS
- Cut up each of the bananas into 6 thick rounds (about ¾ inch in thickness).
- Combine the yogurt, PB2, vanilla and xylitol in a small bowl and mix until smooth.
- Dip each piece of banana in the mixture until evenly coated, take out with a fork or skewer and place on a freezer-safe plate lined with plastic foil (the foil makes it easier to remove the pieces once they’re frozen).
- Repeat until you run out of banana pieces.
- Place into your freezer for at least 4 hours.
- Enjoy you frozen treat! You can drizzle it with a bit of chocolate if you like.
